method that is used in Champagne, where the second fermentation is completed inside of
the bottle to trap the bubbles.

Formerly known as Mousseux, Sparkling Rosé is a sparkling wine made in the traditional method that is used in Champagne, where the second fermentation is completed inside of the bottle to trap the bubbles. The Cabernet Franc grapes are harvested at the perfect time to preserve the clean acidic character and the 24 hours contact between the skin and juice during the first fermentation is what leads to the beautiful rose’ color and light red fruit flavors. This wine appears a deep pink color with salmon highlights and has small elegant bubbles. The aroma and flavors are rich and fresh, reminiscent of cherry, raspberry and strawberry. The finish is clean, long and shows beautiful acidity and intensity of fruit. Four years of lees ageing.

Nose

Clean aromas of strawberry, baked apple and pear, accented by a touch of yeast and toasted brioche.

Palate

Soft ripe red fruits, marzipan, and brioche followed by classic light yeastiness. The mouth feel is crisp, beautiful and elegant. The finish is clean, long and heightened by creamy overtones from four years on the lees. A beautiful Brut style.
