"Quercus" means oak in Latin. The name given to this cuvee comes from its partial vinification
in oak barrels.

Growing Conditions

Reasoned culture, respectful of the vines, the terroir and the environment: Ploughing, organic fertilizers, no insecticide, use of Rak®.

Terroir: Kimmeridgian Marls
Age of the vines: 50 years old and more
Stock density: 6 400 Stocks/ Ha

Winemaking

Prestigious cuvee only produced during very good vintages (good balance between acidity and
sugar).

After a natural cold settling, the must is divided. One part goes into barrels and the other part into
stainless steel tanks. After a long fermentation and a maturation on fine lees, this cuvee is commercialized after no less than 12 months after the harvest.

No malolactic fermentation
Vinification : 1/3 in oak barrel, 2/3 in stainless steel tank
