Growing Conditions

Limestone-clay (Kimmeridgian marls) soils. Exposure to the South South-West.

Average age of Vines : 20 to 40 years.

Bottling

Bottling of the Menetou-Salon Classique -White- starting from spring.

Winemaking

The grapes are received via gravity, sorted, then the whole-berries are pneumatically pressed. Cold stabilisation, indigenous yeasts to ensure a spontaneous fermentation in thermo-regulated inox tanks, maturation on the fine lees, then bottled from spring onwards.

Spontaneous fermentation with indigenous yeast in temperature-controlled stainless steel tanks.

Aging

Aging on fine lees.
