This white wine was developed during a R&D programme aim to “Increasing yeast biodiversity in wine fermentation for increase flavour complexity”.
Growing Conditions
Petit Manseng and Viognier grapes were grown in Melilla estate, with maritime influence from the Río de la Plata and clay soils with calcareous influence.
Harvest
Harvested by hand in 15 kg boxes in March 2022.
Bottling
Botted with minimal handling.
Winemaking
With exceptionally concentrated varietals, this wine is obtained after fermentation in oak barrels for 6 months. Fermented with selected native yeast strains.
Aging
Oak barrels for 6 months.
Nose
Aromas of white fruits like pear and stone fruits such as nectarine mingle with white flowers in this Petit Manseng and Viognier blend.
Palate
The wine is marked by high acidity and a subtle hint of vanilla on the finish. With 50% of the wine fermented in new oak barrels for six months and then blended with fresh wine, it maintains a full-bodied, creamy texture with
substantial mouthfeel.
Appearance
Intense golden color with yellow hues.
