Winemaking

This vintage comes from our oldest gamay and is a tribute to our grandfather, René.

Alcoholic fermentation takes place in vats (15-20 days). The must is raised every day in order to extract the best from the coloring matter and tannins. The wine is then racked and aged for 1 year in barrel.
