In 1680 Margarita Ysern, from a vine-growers family, got married with Jaime Carrau, from a fishermen family of Vilassar de Mar. This union was the beggining of our family winemaking tradition in Catalunya.
Ysern it´s a blend of Tannat grapes from the two best blocks of Tannat in Cerro Chapeu estate.
Growing Conditions
Cerro Chapeu, Rivera, Uruguay. At 250 meters above sea level. Continental climate with great thermal amplitude.
Soils of alluvial origin from volcanic materials washed over millions of years that formed very deep reddish sediments rich in iron, with great depth and increased drainage.
Harvest
Hand-picked with 15 kg cases in February 2019.
Bottling
Then our winemakers make the assemblage and estate bottled with minimal handling to preserve all its flavors in June 2020.
Winemaking
Each tannat block is vinified separately. The clusters are removed over the tanks without pumping. Then the fermentation begins epontaneously slowly in open stainless steel tanks at 20°C. These conditions favor the growth of various native yeasts, resulting in greater body and aromatic complexity.
Aging
After 10 days of fermentation, each Tannat wine is aged in 30% new French and American oak. Then kept in contact with the yeasts for 18 months without any racking.
