Growing Conditions

30-year-old vines are cultivated on the estate vineyard 'Paradiso' in the small DOC of Contessa Entellina (Palermo) at an average altitude of 1,500 feet.

The elevation of the vineyard and the extreme variation between day and night temperatures give an elegant, fresh expression of Nero d'Avola.

Winemaking

Helios, the Greek god of sun, is named after the winery’s founder Aurelio Di Giovanna. The family's flagship Nero d’Avola is surprising for its elegance and represents the pinnacle of the family’s passion and dedication to their territory.

A selection of hand-harvested grapes are de-stemmed. Spontaneous fermentation takes place in open top barrels and stainless steel tank, each varietal separately. Soft pressing after 8 days of skin contact fermentation.
Certified organic winemaking & vegan friendly.

Aging

French tonneau for 9 months & stainless steel tank for 18 months before bottling. Aged in bottle for 1 year before release.

Nose

Hints of violets, black cherry and blackberry,
pleasant notes of sweet spice and chocolate

Palate

Decisive yet elegant, with velvety tannins and a pleasant, lengthy finish.

Roasted eggplant, pasta with wild boar ragu. Pairs well with grilled or roasted lamb and game meat.
