Growing Conditions

Limestone soils of a sandy texture. Completely biodynamic viticulture. The grapes are sourced from estate vineyards planted in Can Castany and Can Prats, located in the Espiells area. These are the best possible vineyards of Xarel-lo. Southeastern oriented vineyards. 650-1,300 ft. (200-400 m.)

Bottled one year after the harvest. 3000 bottles made.

Winemaking

Methode champenoise. Rapid entry into the cellar by gravity. Gentle press with 50% extraction of free-run juice. Each variety is fermented in small tanks at controlled temperature. Secondary fermentation in bottle.

One of the few designated "Cavas de Paraje," the highest quality designation a Cava can achieve.

Aging

60 months in bottle.

Nose

Clean and fresh, Claror shows great aromatic complexity with hints of apple, toasted almond and subtle mineral notes. Very elegant with a good balance between mineral notes and freshness.

Palate

On the palate, it has good acidity and is full-bodied, with a persistent finish.

Appearance

Fine and persistent bubbles.

Food Pairing

A phenomenal aperitif or perfect to pair with Spanish rice dishes, fish, oysters, white meat, and goat cheeses.
