Growing Conditions
4-hectare plot on the Pierres Plates hillside. Middle Jurassic clay-limestone soil. Certified in organic farming (VERITAS) and biodynamics (Demeter).
Winemaking
Cold pre-fermentation maceration. Alcoholic fermentation in stainless steel vats on indigenous yeasts. Malolactic fermentation in oak barrels
Aging
Aging in Burgundy-type barrels aged 1 to 4 years.
Nose
Great aromatic intensity with scents of red fruits: raspberries, blackcurrant with notes of caramel and vanilla.
Palate
Silky on the attack. Notes of blackcurrant, blackberries, caramel and tobacco. Rich and well structured. Wine with great power of expression. Persistent finish.
Appearance
Garnet red.

Very pleasant to consume with grilled meats, red meats in sauce, game, strong cheeses.
